Pour-over is drip coffee with you as the machine: a cone, a paper filter, and a kettle you control. The recipe two benchmark roasters publish agrees on the shape - about 1 part coffee to 17 parts water (Counter Culture's words: “We use a 1:17 coffee-to-water ratio”), a medium-fine grind Stumptown describes as “About as fine as kosher salt”, water just off the boil at 200-205°F, a short bloom, then a slow spiral pour that finishes draining around three to four minutes.

Mechanically, pour-over is the same brewing as a drip machine - hot water through a bed of grounds and a paper filter, pulled by gravity. What changes is who holds the variables. A machine fixes its own temperature, flow rate and contact time; in pour-over all three are in your hands, which is why the method produces the clean, bright, separable flavors that make it the tasting bench of specialty coffee - and why it punishes sloppiness more than any other everyday method. Fresh roasted coffee holds carbon dioxide - the same trapped gas that makes espresso's crema possible. In pour-over that gas is a problem rather than a feature: it pushes water away from the grounds, so a bed that never bloomed brews unevenly and tastes thin. The small first pour and the pause let the gas escape - visibly, the bed puffs and bubbles - so the main pours meet grounds that actually accept water. It costs thirty seconds and fixes more bad pour-overs than any other single step.
The spiral pour the recipes describe - slow, even, aimed at the dark spots and away from the paper - is physically impossible from a normal kettle's spout, which dumps water in surges that dig craters in the bed. A gooseneck's long thin spout throttles the flow so the pour becomes a controllable instrument. That is why our verified gear list below treats the kettle as half the purchase rather than an accessory: cone plus filters costs about thirty dollars, and the kettle roughly doubles the outlay while contributing at least half the control.
Sour or thin and it drained fast: the grind is too coarse - water passed before it could extract. Go finer. Bitter or harsh and it drained slowly: too fine - the bed choked and over-extracted. Go coarser. Right taste but past four minutes: usually a too-fine grind or an overloaded cone rather than pour technique. Adjust one variable at a time - the grind chart's texture descriptions are the physical target, and taste, as always, outranks the stopwatch.

Check price on Amazon →About 1:17 coffee to water by weight, per both roaster recipes this page reads - Stumptown at 21 g to 360 g, Counter Culture at 30 g to 500 g. Between 1:15 and 1:17 is the working range: less water for a denser cup, more for a lighter one. Weigh both; scoops drift.
Medium-fine - both source guides describe salt texture, kosher or table. It sits well coarser than espresso and finer than French press on our grind chart. If the brew drains fast and tastes sour go finer; slow and bitter, coarser.
Just off the boil: Stumptown says about 205°F, Counter Culture 200°F. Boil the kettle, wait roughly thirty seconds to a minute, and pour. Cooler water under-extracts toward sourness; a rolling boil straight onto light roasts is workable but less forgiving.
Under-extraction, almost always: grind too coarse, water too cool, or a pour that rushed through. The order to try: grind one step finer, then check the water is genuinely just off the boil, then slow the pours so the total drain lands near three minutes.
For the method as the recipes describe it, effectively yes - the slow spiral pour cannot be produced by a standard spout. You can brew passable cups without one, but pour control is the variable the whole method exists to exploit, and the kettle is what provides it.
