An 18-Year Founder-Led Record

Gregory Kolsto began roasting in 2008 — a 2.5-kilo Ambex in a garage, deliveries by bicycle, hand-drawn bags — opened the Main Street coffee bar in 2012, and moved roastery and cafe under one roof on Troost in 2021. Founder-run continuity is documented at multiple points across that whole arc, from the letterpress design identity of the early years to the shop's own current statement of purpose.
