How Much Coffee Grounds Per Cup? The Coffee to Water Ratio

The short answer: use about 10 g of coffee (2 level tablespoons) for every 6 oz of water. For a full 12-cup pot the honest answer depends on your machine: about 98 g if its cups are 5 oz, or about 117 g if they are 6 oz. That difference is the whole reason this page exists — a coffee maker's "cup" is not a measuring cup, and once you know which one yours uses, every pot gets more consistent.

For a standard 6 oz coffee-maker cup, start with about 10 g of coffee to 177 ml of water. For an 8 oz mug, use about 13 g. For a 12-cup pot, about 98 g (5 oz cups) or 117 g (6 oz cups). All of these follow the SCA Golden Cup starting point of 55 g of coffee per litre of water, approximately a 1:18 ratio by weight.

Choosing a brew method loads that method's common starting ratio — you can still change it. Cold brew ratios are much stronger because the result is a concentrate you dilute before drinking.

Why your coffee maker's "cup" isn't a measuring cup

Here is a common source of confusion in home brewing. A US customary cup is 8 fluid ounces. A "cup" on your coffee maker is not. Coffee makers commonly use a "cup" smaller than the 8 oz measuring cup: 5 oz is especially common — Braun, for example, documents a 12-cup/60-oz carafe — while other brewers use 6 oz or another volume entirely.

That means a "12-cup" coffee maker holds roughly 60–72 oz of water (about 1.8–2.1 litres) depending on which convention it uses, not 96 oz. If you have been dosing 12 mugs' worth of coffee into it, you have been brewing something closer to syrup — and if you have been dosing by the mug and wondering why it tastes weak, the same arithmetic explains it in reverse.

Check yours once: fill the carafe to its "4 cup" mark, then pour that water into a measuring jug. If it reads about 24 oz, your maker uses 6 oz cups. If it reads about 20 oz, it uses 5 oz cups. Write the answer on a sticky note under the machine and never think about it again.

The Golden Cup standard, explained

The Specialty Coffee Association maintains the closest thing filter coffee has to an official brewing benchmark: the Golden Cup standard. It is worth knowing because it is the reference point most published brewing guidance is measured against — though plenty of brewing traditions predate it and operate happily outside it.

Two of these are worth internalising. The coffee-to-water ratio strongly influences beverage strength — how concentrated the finished cup is. The extraction yield describes how much of the coffee's soluble material actually dissolved, which is what most flavour faults track. They are related but not interchangeable: you can brew a weak-but-bitter cup or a strong-but-sour one, which is why "add more coffee" is not always the fix.

Contact time in the standard is differentiated by grind rather than given as a single range, and is stated that way above. Note that 55 g/L is the published figure; "1:18" is the convenient rounded shorthand for it (55 g/L is exactly 1:18.18), and this page's calculator computes from 55 g/L rather than from the rounded ratio.

Careful with "12 cups": the row above assumes 6 oz cups, giving 72 oz. Many 12-cup makers are actually 60 oz (5 oz cups) — in that case use about 98 g. This is exactly why checking your carafe once is worth the two minutes.

The Golden Cup ratio is a published filter-coffee standard. Everything in the table below is different in kind: these are common starting ranges drawn from widespread practice and recipe convention, not standards issued by any body. Treat them as places to begin, then adjust to taste.

One correction worth making: the Technivorm Moccamaster is described as SCA-certified almost everywhere online, including by retailers. It does not appear on the SCA's certified-equipment list as published at the time we checked (27 August 2026), and neither does Bonavita. That is not a verdict on either machine — plenty of excellent brewers have never entered the programme, and certifications lapse or are not renewed. It only means the certification claim itself should not be relied on without checking the SCA's current list.

Fixing bitter and sour coffee

Before you change the ratio, work out which direction the cup is off. These are heuristics, not diagnoses — bitterness and sourness each have several possible causes, including roast level, water chemistry, coffee age, and simple concentration — but as starting points they resolve most everyday problems, and the two directions have opposite fixes.

A useful troubleshooting order: grind first, ratio second. Our grind size chart covers what each brewing method wants. Coffee-to-water ratio primarily influences how strong the finished cup is; grind size and contact time strongly influence how much of the coffee actually dissolves, so when a cup tastes distinctly under- or over-extracted those are the variables to move first. Grind and time are also coupled — coarsening the grind usually changes how fast the water passes through — so change one thing at a time. Because scoop capacity and coffee density both vary, these volume measures are starting points rather than precise doses: a basic kitchen scale is the simplest way to make your dose repeatable.

It depends on what your machine calls a cup, and this is a common brewing mistake. If your carafe uses 5 oz cups, a 12-cup pot holds 60 oz (1.8 litres) and needs about 98 g of coffee at the SCA Golden Cup ratio — call it 100 g, or 10 level scoops. If it uses 6 oz cups, the pot holds 72 oz (2.1 litres) and needs about 117 g, roughly 12 scoops. Check your carafe markings against a measuring jug once and you will never have to wonder again.

Should I measure coffee by weight or by volume?

By weight, if you can. A tablespoon of dense, dark-roasted beans and a tablespoon of light-roasted beans can differ by several grams, and grind size changes how much fits in the same volume too — so the same "2 scoops" can contain noticeably different amounts of coffee. A basic kitchen scale removes that variable entirely and is one of the simplest ways to make your dose repeatable.

Why does my coffee taste bitter or sour?

Bitterness can be a sign of over-extraction — too much coffee surface exposed for too long (grind too fine, brew too long, or water too hot). Sourness can be a sign of under-extraction — grind too coarse, brew too short, or water too cool. Both have other possible causes, including roast level, coffee age and water chemistry. A useful troubleshooting order is grind first, then ratio, then time, keeping water in the 195–205°F range the SCA specification gives.
