Buy the V60 02 unless you know why not. Hario sizes the V60 by cups of 120 ml: 01 for one or two cups, 02 for one to four, 03 for one to six, and the 02 brews a single mug as well as it brews a small carafe. On material, the plastic V60 is the cheapest and, counter-intuitively, the one many baristas prefer, because thin plastic steals the least heat from the water; ceramic and glass look better and hold heat once warmed, and metal is for travel. Every V60 shares the same geometry - a 60-degree cone, spiral ribs and one large hole - so the pour, not the material, decides the cup. The Switch is a V60 with a valve in the base that lets you steep and then release, and the NEO is the 2025 redesign with 72 ribs and no handle. What a V60 is, and why every version brews the same way

Hario introduced the V60 in October 2005 - its NEO listing marks the 20th anniversary - and the name is the shape: a cone with walls at a 60-degree angle, spiral ribs running up the inside and a single large hole at the bottom. The ribs hold the paper filter off the wall so air can escape and water can drain along the whole cone, and Hario's product pages describe them as allowing a deeper bed of coffee and flexible control of pour speed; the large hole means nothing restricts the flow but the coffee and the paper, so pouring fast gives a lighter cup and pouring slowly a richer one, which is exactly what the starter set's listing says. The V60 Mugen is the exception that proves the rule, with a smaller hole and fewer ribs for a slower drawdown, and the NEO re-engineers the ribs - 72 fine ones converging into nine at the bottom - to spread water evenly and speed extraction.

Because the geometry is constant, the variables are size, material and what you pour with. The V60 rewards a gooseneck kettle and a scale, and our pour-over method guide gives the recipe that Hario's own instructions and a competition recipe agree on: about 1:17, medium-fine grind, water just off the boil, a bloom, then slow pours to finish around three to four minutes. Sizes 01, 02 and 03, and how much each really brews

Hario counts a cup as 120 ml (4.2 fl oz), which its listings state outright, so translate before you choose. The 01 is rated for one to two cups - up to about 240 ml, one mug - and it is the right size only for someone who brews exactly one small cup and wants the smallest cone; the ceramic 01 measures 119 by 100 by 82 mm on Hario's page. The 02 is rated one to four cups, up to roughly 480 ml, and it is the size to buy: it brews one mug with a filter that has room, two mugs into a 600 ml server, and it is the size every recipe, every kit and every accessory assumes; the plastic 02 is 137 by 116 by 102 mm. The 03 is rated one to six cups, about 720 ml, for a table; it is 157 by 137 by 122 mm and 142 g in plastic, and it takes its own 03 filters, which are harder to find in shops.

A bigger cone brewed small works, but the coffee bed is shallower and the pour less forgiving, so buy the size you brew most days. The Switch sizes follow the same codes with different capacities, because it holds water rather than passing it: Hario's page gives 200 ml for the 02 and 360 ml for the 03. The Range Server in 600 ml is the carafe matched to an 02; the starter set pairs the plastic 02 with a 700 ml server and 40 filters, and is the cheapest complete V60 setup Hario sells.

Plastic, ceramic, glass, metal and the NEO: what changes

Plastic is the V60 to start with, and not only for price. Hario's plastic 02 is AS resin, dishwasher safe and boiling-water safe, made in Japan, and it won the 2007 Good Design Award; thin plastic has almost no thermal mass, so it takes almost no heat from the brew water, which is why many professionals use it in preference to heavier cones and why a cold ceramic cone can drop the first pour by several degrees unless it is preheated. It also survives being dropped. Ceramic is porcelain made in Arita, the traditional Japanese ceramics town, per Hario's listing - heavier, beautiful, and heat-retaining once warmed, which its listing states keeps the brew temperature steady through the cycle; preheat it with hot water every time. Glass is Hario's heatproof glass on a plastic or wooden base, showing the drawdown and behaving between plastic and ceramic thermally. Metal is stainless steel for travel and camping, light and unbreakable, and it sheds heat fastest of all. The NEO is Tritan, handle-free with a silicone holder, and deliberately thin to limit the temperature drop, with the 72-rib wall for even flow; at 135 g it is the new default for anyone who wants the technical case rather than the classic look.

The Switch changes the method rather than the material. It is a glass V60 cone on a silicone base with a stainless steel ball valve worked by a plastic switch; closed, it holds water and coffee together like a French press, and opening it drains through a V60 filter. Hario's page calls it a hybrid that brews like a standard pour-over or as an immersion brewer, and it is the most forgiving V60 there is: a steep needs no pouring technique, and the paper still gives a clean cup. It ships with 40 filters and comes in 02 and 03, and in a ceramic 02 version.

Filters, and which fits which

V60 filters are cone-shaped papers sized 01, 02 and 03 to match the drippers, and a filter fits only its own size: a 02 filter in a 01 cone stands proud of the rim, and a 01 filter in a 02 cone sits below the ribs. Hario's listings state the capacities the same way as the drippers - 01 for 1 to 2 cups, 03 for 1 to 6 - and they come white (oxygen-bleached, no chlorine) or natural (unbleached, which some people find gives a faint paper taste unless rinsed) and tabbed or untabbed, the tab being a fold-over strip that makes the filter easier to lift out. Rinse the filter with hot water before adding coffee; it warms the cone, seats the paper on the ribs and removes any paper taste, and it is the single step that most improves a first V60 cup. A box of 100 lasts a daily brewer three months, and the 02 is the size found everywhere; the 01 and 03 are worth buying in twos when you find them. Brewing on a V60: the recipe, and what each size changes about it

The V60 recipe that Hario's own instructions and a competition recipe agree on is simple: about 1 part coffee to 17 parts water by weight, ground medium-fine to the texture of table salt, water at 200 to 205 F, a bloom of two to three times the coffee's weight for 30 seconds, then slow circular pours in two or three stages so the drawdown finishes between three and four minutes. For one mug in a 02 that is 15 g of coffee and 250 g of water; for a 600 ml server, 30 g and 500 g, which is where the 02 stops being comfortable and the bed gets deep enough that the pour has to slow. In a 01 the same 15 g sits deeper and drains a little slower, which is why some people prefer the 01 for a single cup; in a 03, 40 g and 680 g fills the cone with room to spare. Rinse the paper, preheat the cone if it is ceramic or glass, and use a scale: the V60 punishes guessing more than any other pour-over because the large hole gives it no built-in flow control. The Switch changes the recipe rather than the ratio. Close the valve, add coffee and all the water at once, steep for two to three minutes, open the valve and let it drain: an immersion brew that tastes fuller and more forgiving than a poured V60, with the paper still holding the sediment back. The NEO's 72 ribs drain faster than the classic cone, so grind a touch finer or pour a touch slower than you would in a standard 02. None of these are rules, and the point of a V60 is that the same cone makes a bright fast cup or a heavy slow one depending on how you pour it.

Which V60, by how you brew

You want the classic look on the counter: ceramic 02 (white or a colour), preheated each time. Exactly one small cup, always: ceramic or plastic 01, with 01 filters. Brunch for four to six: plastic 03 with 03 filters. Pouring technique is the problem: the Switch 02, or the Drip-Assist on any 02. You want the newest engineering: the NEO 02. Camping and travel: the metal 02. You brew into a carafe: the 600 ml Range Server.
