COFFEELAB AWARDS 2026 · VENUE
Winner Metric Coffee
CLA-CHI-2026-MC02West Town, 2021 W Fulton St, Chicago, IL 60612 · Open since 2016 · The company opened a second, much larger café-and-roastery, Milli by Metric, at 3110 N Kedzie Ave in Avondale in September 2025; Daily Coffee News records that the roasting operation moved there and “the former roastery at the Fulton Street cafe has been transformed into a wholesale showroom, training lab and hub for home and commercial espresso equipment sales.” This award evaluates the West Town café at 2021 W Fulton St — the company’s founding café; Milli is named so the scope is unambiguous and is not separately awarded.
CoffeeLabAdvisor’s Best Coffee Shop award is an evidence-led editorial selection under a published methodology — not a blind tasting or a sensory ranking. It names the venue with the strongest documented evidence under that methodology, scored across six equal dimensions, and evaluates its recipient against a fixed standard: businesses considered and not recognised are not publicly scored and not publicly characterised. On that basis, Metric Coffee’s café at 2021 W Fulton Street in West Town — the company’s founding café, at this one address since October 2016 — receives the award for the City of Chicago at Silver. This award was decided differently from any before it, and the difference is stated first. An earlier evaluation of this city proposed this same company from a field of thirty-one and was withheld on the evaluator’s own recommendation, because the field was not closed; discovery was reopened and eighty-six candidates were registered from five independent published sources. Eight finalists were then written up as redacted evidence files — no names, no neighbourhoods, no source titles — and scored by a reviewer with no prior exposure to any Chicago research, working from the files alone with no web search, who recorded no recognition of any candidate’s identity. The scorecard on this page is that reviewer’s. The evidence behind it: the company placed ninety-fifth in a global ranking of coffee shops announced in February of the award year, assessed by an expert panel of more than eight hundred with a public-vote component; it is a certified B Corporation and has published a print guide to its own green-coffee buying; its two founders are documented at this address by the trade press that covered the opening; a city guide last updated in July 2024 records drink prices here and that dairy alternatives carry no surcharge; and the café has operated at one address for a decade. Three facts belong beside the result. First, the ranking names the company and the state, not this café — so it is scored as company-level evidence at the floor of its band, which is where the blind reviewer placed it. Second, this recipient was the only finalist of eight with all six dimensions evidenced; stripped of that advantage its lead narrows to roughly one point over both Honorable Mentions, and the reviewer said so. Third, the rule on missing evidence was amended before this award, after a stricter version of our own rule would have prevented any award issuing for this city — the amendment restored the convention used by the seventeen city awards already published, its direction favoured this recipient, and an independent reviewer who did not know which business was which ruled it legitimate with conditions. We do not publish comparative scores for the rest of the field.
2021 W Fulton St, Chicago, IL 60612 — the company’s founding café at 2021 W Fulton Street in West Town — in its own words “our flagship café & training center, nestled in Chicago’s Kinzie Corridor” — a 400-square-foot walk-up open since 10 October 2016, with a glass divider onto the training centre where the roastery stood until 2025. This award evaluates this one venue; Milli by Metric, the company’s café-and-roastery at 3110 N Kedzie Ave in Avondale, is named on this page so the scope is unambiguous and is not separately awarded.
A walk-up espresso bar serving the company’s own coffee — roasted since September 2025 at Milli in Avondale on the Probat UG15 that anchored this café’s roastery from 2016 — alongside batch brew, cold brew and Spirit Tea. Daily Coffee News’ opening coverage recorded La Marzocco GB5 espresso machines and Mazzer Robur E grinders at the bar. The company’s FAQ states it is “100% independently owned”, and its co-founder told the trade press in 2025 that the new roastery was built “without outside investors”.
Our flagship city award. An editorial selection: the independent coffee shop in the city that our documented-evidence screening selected for full scoring, carried through to a six-dimension scorecard. The rest of the field is screened and no comparative scores are published, so the award is not a ranking of the city. The award level (Gold/Silver/Bronze) is an absolute score on that shop against the published rubric, not a placing against other businesses. This is an evidence-led editorial award, not a blind tasting or citywide sensory ranking: no comparative scores for the field are published, and no claim is made that a winner would defeat every other shop in its city in a head-to-head tasting.
Silver (84/100) — the tier follows the score: six equal-weighted dimensions totalling 505, averaging 84.17, rounded to 84 — Silver. Every figure on this page is a documentary-evidence score, not a sensory rating, and every one was placed by an independent reviewer scoring eight redacted candidate files blind. Coffee Quality (85) sits at the floor of the composite-ranking band: the ranking names the company and the state rather than this café, so it is company-level evidence and may not be placed higher. Sourcing & Transparency (85) rests on B Corp certification, a published green-buying guide and the company’s sourcing FAQ — company-level, which this dimension permits. Barista & Ownership (80) is the floor of its band: the only captured fact is the company’s own statement of independent ownership. Operational Consistency (85) rests on a decade at one address and a second café-roastery opened in 2025. Plant-Based Milk (85) and Value (85) each rest on a single city-press record of this café’s terms and prices, last updated in July 2024, and sit at the floor of their band for that reason. No dimension carries the insufficient-evidence default. Scoring below.
The most remarkable part is that we built it without outside investors. Painful? Absolutely. Worth it? Completely.
The strongest evidence in this field is the only current assessment of a coffee shop as a coffee shop: The World’s 100 Best Coffee Shops 2026, announced on 16 February at CoffeeFest Madrid, lists “95 Metric Illinois (USA)”. The awarding body’s own methodology page states: “Public votes will account for 30% of the final score, while the expert panel’s evaluations will contribute the remaining 70%.” Its announcement records that “over 800 industry experts and 350,000 public votes shaped the final ranking” after “evaluating more than 15,000 coffee shops from around the world”, and Time Out’s report of the list adds that the panel assessed “everything from bean quality and barista expertise to sustainability and overall atmosphere.” Two things bound how far this evidence may carry. A result that is thirty per cent public vote is not a judged result, so under this methodology it may never enter the top band. And the list names the company and the state — not this café — so it is company-level evidence and sits at the floor of its band. The blind reviewer placed it exactly there, and when asked separately which class of evidence should decide a coffee-shop award, chose this one over a three-year-old product award, because the ranking assesses the shop and the product award assesses a coffee.
The company’s FAQ states: “Our company is 100% independently owned, which means we focus on what matters most—coffee and people.” Its co-founder, Xavier Alexander, told Daily Coffee News in September 2025 of the new Avondale roastery: “The most remarkable part is that we built it without outside investors. Painful? Absolutely. Worth it? Completely.” On sourcing, the company publishes what it buys and why: B Lab lists it as a Certified B Corporation since November 2022 with an overall B Impact Score of 83.1; in 2021 it published Source Code, a print guide to green-coffee buying that Barista Magazine described as “showcasing pricing transparency through partner and coffee producer Nelson Chavez”; and its FAQ records: “We expect the same level of transparency from our import and export partners as we do from the farmers we work with.” These are company practices rather than facts about one room, which is exactly what the sourcing dimension measures — and company-level evidence is admitted for this dimension alone.
Daily Coffee News covered the opening on 11 October 2016: “Chicago’s Metric Coffee is opening its first brick-and-mortar café attached to its Near West Chicago roastery.” It named “Metric Co-Founder Xavier Alexander, a former Intelligentsia roaster and QC specialist”, and recorded that the café “was designed by [Metric Co-Founder and Caffe Streets Owner] Darko Arandjelovic”. The company’s own café page, captured in October 2026, gives the same address and “Open Daily 7AM to 4PM”. In 2025 the roasting moved to the company’s new Avondale site — the trade press records that “the former roastery at the Fulton Street cafe has been transformed into a wholesale showroom, training lab and hub for home and commercial espresso equipment sales” — and the café kept trading. A venue record documented at the opening, at the ten-year mark, and at the one material change in between is the strongest consistency evidence this field produced.
This award’s claim is precise, and it rests on how the choice was made as much as on the evidence. The first evaluation of Chicago named this company from a field of thirty-one and was withheld, because thirty-one is not a Chicago field. The reopened discovery registered eighty-six candidates and the eight strongest were scored by a reviewer who did not know which business was which. That reviewer scored this café a wider margin over its nearest rival than the evaluator had — and when the evaluator’s own figure was higher, the lower one was published. It is not a claim that any other shop’s coffee is inferior; two of the field’s most distinctive cafés are recognised on this page as Honorable Mentions, and the reviewer’s own caution is quoted below: the field “can be separated, but only just.”
Each score rates the strength of the publicly documented evidence we found for that dimension — not first-hand testing. We did not visit this shop or taste its coffee. That is our standard evaluation tier, defined in the methodology; hands-on assessment belongs to CoffeeLab Verified, which this shop has not undertaken.
Overall: 84/100 — Silver. Six equal-weighted dimensions per our venue awards methodology; Silver is the absolute-rubric tier for this score, not a placing against other shops.
"Coffee Shop of the Year" names the candidate our documented evidence and specialist-signal screening selected for full scoring — it is an editorial selection, not the output of scoring every shop in the city against each other. An evidence score does not represent a current sensory rating; it reflects the strength, independence and recency of the documentation available under this programme's rubric.
What Operational Consistency measures: sustained operation and a stable, documented offer over time — longevity, continuity at the awarded address, and documented continuity of operation over time. It is not a measurement of shot-to-shot consistency in the cup, which would require in-person testing we do not perform.
Unlike general review aggregation, we grounded this in independent, named, checkable sources rather than anonymous review excerpts:

Key signals: The World’s 100 Best Coffee Shops 2026 (the company at ninety-fifth, with the public-vote component and the company-level attribution both disclosed); B Lab’s B Corp listing; Barista Magazine on the company’s green-buying guide; Daily Coffee News on the 2016 opening and the 2025 roastery move; Time Out Chicago’s forty-shop guide, last updated July 2024, which records this café’s prices and milk terms; and the company’s own café, story and FAQ pages. Honesty notes: no cup-judged result of any kind exists for this company — a circulated claim that it had won a national coffee award was traced to an undated multi-year archive and is not made here; two earlier sources that attached the ranking to this café could not be captured and are not cited; and the specialist press on this café is thin, which is why four of six dimensions sit at the floor of their bands.
Documented from Daily Coffee News’ October 2016 opening coverage: “two Robur E grinders for espresso via La Marzocco GB5 espresso machines, and a Mahlkonig Guatemala for filter coffees”, with the bar’s daytime patrons given “a clear view into the roastery that’s centered on a vintage 1961 Probat”. That is a 2016 report, and this page does not claim the current bar beyond it. The roasting itself now happens in Avondale: the company’s story page states “We roast all our coffees on an antique Probat UG15 and Probat P25”, and the trade press confirms the UG15 “continues to anchor the roasting operation” at Milli.
We do not earn commission on café equipment: professional bar machines are not sold through our affiliate programme, and nothing in this section is a product recommendation. If you want home equipment evaluated on the same evidence standard, see our Best Overall Espresso Machine award or Best Overall Burr Grinder award.
Scored from one record, and the page says so. Time Out Chicago’s guide, last updated in July 2024, lists this café’s standard latte as “Starting at $6 (free dairy alternatives, though!)” — dairy alternatives are offered and carry no surcharge. Which milks are offered is not named in any capture, so the options below are recorded as unconfirmed. That single fact is the only plant-milk evidence documentary capture produced for any of the eight finalists: independent cafés keep their drink menus on in-store boards, not web pages. It places this dimension at the floor of its band; the blind reviewer flagged the placement as generous, and the record is two years old. A café whose menu is not online has not been judged poorly; it has been judged on less.
No coffee shop is perfect, and no award page should pretend otherwise. We publish these honestly so you can make an informed decision.
This award names the venue with the strongest documented evidence under a published methodology. It is not a blind tasting and not a sensory ranking: we did not visit, did not taste, and make no claim about what is in the cup today. Every figure on this page rates the strength of documented evidence available for evaluation. We choose documented, repeatable, auditable evidence over unrepeatable impressions, and this disclosure is the cost of that choice.
Of eight finalists scored blind, this was the only one with all six dimensions evidenced. In the reviewer’s own words, “candidates with more captured evidence look stronger not because they are better but because more was found about them” — search effort is not the same as search success. Stripped of that advantage the recipient’s lead narrows to roughly one point over both Honorable Mentions. The reviewer named it the winner on every reading tested, and called the call close; both statements are true and both are published.
A stricter version of our own missing-data rule, adopted from an external audit, would have prevented any award issuing for Chicago, because plant-milk evidence could be captured for one finalist in eight. On 11 October 2026 the owner ruled that Chicago be decided on the same instrument as the seventeen city awards already published for 2026 — six equal dimensions, the same bands, and the same convention for unevidenced dimensions, under which eight of those seventeen awards issued. That ruling made this award possible, and its effect favoured candidates, this recipient among them, whose thinner dimensions would otherwise have been disqualifying. An independent reviewer who did not know which business was which ruled the amendment legitimate with conditions; every condition is met, and this disclosure is one of them.
The World’s 100 Best Coffee Shops 2026 lists “95 Metric Illinois (USA)”. Which of the company’s two Chicago cafés the panel assessed is not stated by the list. Two earlier sources that attached the placing to this address could not be captured and are not cited. The ranking is therefore scored as company-level evidence at the floor of its band — the blind reviewer placed it there independently — and this page claims no more for it than that.
The ranking’s publisher states the result combines expert evaluation with public voting; under this methodology a result any part of which is public voting is not a judged result and may never enter the top evidence band. Our band for composite rankings also does not distinguish a lower-half placing in a global hundred from a top-twenty one; the reviewer noted this may overstate the coffee-quality score, and it is scheduled for correction in the 2027 methodology.
Across eight finalists, documentary capture produced plant-milk terms once and drink prices three times, all from one city-press guide last updated in July 2024 rather than any venue’s own menu — independent cafés keep drink menus on in-store boards, and the record is two years old. This café’s plant-milk and value scores each rest on that single guide and sit at the floor of their band. The specific milks offered are not named in any capture and are recorded as unconfirmed. A café whose menu is not online has not been judged poorly; it has been judged on less.
From 2016 the café sat beside the company’s roastery; Daily Coffee News records that in September 2025 the roasting moved to the company’s new Avondale site and the Fulton Street roastery became “a wholesale showroom, training lab and hub for home and commercial espresso equipment sales”. The café now serves coffee roasted elsewhere by the same company. The equipment named on this page is from a 2016 report and has not been re-verified.
A claim circulated that the company had won a national coffee award. Traced, it rested on an awarding body’s archive that renders a current-year heading over a fifteen-year collection with no per-entry years; the only independent trace is a 2018 finalist entry for a Peruvian coffee, attributed on that list to a company in a different state. No such credential is claimed here, and coffee quality is scored on the ranking alone.
Eighty-six candidates were registered from five independent usable sources — a city-press guide of forty (last updated July 2024), a national food publication’s city guide (June 2026), two local-press guides and a specialty-trade guide — before the eight finalists were chosen; eleven registered names could not be verified from any capture. A specialty-press city guide and a national awards archive returned a 403 to every capture attempt. This is documented saturation, not a claim to have assessed every café in Chicago, and an excellent shop with no public evidence trail is invisible to this method.
Coffee Quality, Plant-Based Milk and Value sit at their band floors for the attribution and single-source reasons stated above, and Barista & Ownership at the floor of the own-materials band because the only captured fact is the company’s own statement of independent ownership — no competition result, no named barista credential, no independent profile of the bar staff was found. The published 84 is the lower of two defensible figures: the evaluator’s own shadow scoring reached 85, and the independently produced number was adopted.
No health-inspection record was obtained from the issuing authority for any venue in this evaluation, so none is claimed, and third-party inspection aggregators were not used as evidence. A search for adverse signals (closures, lawsuits, labour disputes, ownership changes) was run for the winner on 11 October 2026 across the local and trade press and the company’s own pages. It surfaced a 2020 crowdfunding appeal for the company’s staff during the pandemic and nothing bearing on eligibility. This is a statement about what a documented search found on that date, not a guarantee that nothing exists.

Open Status Warning: Operating status confirmed from the company’s own café page, captured 11 October 2026: “2021 W Fulton St” “Chicago, IL 60612” “Open Daily 7AM to 4PM”. No health-inspection record was obtained from the issuing authority for this evaluation, so none is claimed. We did not independently visit. Always check current hours before visiting — coffee shop status can change. If this shop has closed, please contact us so we can update this page.
CoffeeLabAdvisor does not conduct in-person shop visits, and for this award did not contact any venue: every dimension of every finalist was scored from evidence already published to the public. We did not taste the coffee and did not assess current barista technique. We could not capture two sources an earlier evaluation had relied on — a specialist-magazine feature and an independent review that attached the global ranking to this café — so the ranking is scored as company-level evidence and those sources are not cited. We could not capture the ranking publisher’s own methodology page beyond its criteria, and quote the weighting from Time Out’s report of it. We could not capture plant-milk terms or prices from any finalist’s own menu; the two facts used here come from a city-press guide and are the only such facts the field produced. Two sources we wanted — a specialty-press city guide and a national awards archive — returned a 403 to every capture attempt. An adverse-signal search (closures, lawsuits, labour disputes, ownership changes) was run for the winner on 11 October 2026 across the local and trade press and the company’s own pages; its result is stated in the limitations below.
Shops that share formal documentation confirming their equipment and sourcing claims (invoices, spec sheets, roaster agreements) carry the CoffeeLab Verified badge. Metric Coffee has not yet received one — shared documentation would confirm the equipment and roaster lineup firsthand.
Award recognition is not a verdict on any other shop. The following are recognised in their own right, for what we found in their favour.
Recognised for thirteen years of nonprofit coffee in Englewood — founded in 2013 by Phil Sipka, roasting its beans on-site at 825 W 69th Street, with community programming from open-mic nights to yoga, and the most accessible price in the field: Eater Chicago’s 2026 guide records that “a cup of coffee is just $1.60”.
Recognised as the most broadly corroborated café in the field — named independently by national specialty trade press, city press and a city tourism guide — a roaster “devoted to roasting beautiful coffees”, in its own words, founded by Eylem Ozkaya, Kevin Heisner and Ria Neri, and serving its Logan Square café at 3022 W Diversey every day.
The winner is the candidate our documented-evidence screening selected for full scoring under the CoffeeLabAdvisor 2026 methodology, and the only candidate whose scorecard is published. Because no comparative scores are published, this award is not a quantitative ranking of the city and should not be read as one. An Honorable Mention is a recognition, not a placing: we do not rank the field, and nothing on this page should be read as an assessment of any business other than the winner.
