If you are choosing between spending more on the machine or more on the grinder, buy the grinder. A capable machine fed by an inconsistent grinder produces bad espresso; a modest machine fed by a good grinder produces genuinely good espresso. That is buying advice rather than a law: for most home setups, an extra hundred dollars moved from the machine to the grinder buys more improvement in the cup than the same hundred left on the machine.

Why espresso needs a different grinder
Espresso is typically extracted at around nine bars of pressure through a compacted puck of coffee, over something like 25 to 32 seconds — a common recipe window rather than a definition, and modern machines vary the pressure deliberately. That does two things no other brew method does: it demands a very fine grind — a fine-sand texture that clumps slightly when pinched, among the finest used in common brewing (Turkish coffee goes finer still) — and it makes the result exquisitely sensitive to how uniform those particles are. Note what we are not giving you: a micron number. Espresso grounds are a distribution of particle sizes rather than a single target, and we could not find an authoritative published figure for the range, so we are not going to invent the precision.
In a French press, coffee sits in water for four minutes and small inconsistencies have time to even out. Espresso gives them far less. A wide particle-size distribution extracts unevenly: finer particles give up soluble material readily, coarser ones more slowly, and when both sit in the same basket the cup can read as bitter and sour at once. No machine adjustment fully compensates for a grind distribution that is fundamentally wrong for the method — you can move the shot around, but you cannot make the particles more alike.
The practical consequence: "dialing in" espresso means making tiny grind adjustments until the shot runs in the right time. A grinder whose adjustment steps are too coarse makes that hard, because the setting you want can fall between two available positions — which is why adjustment resolution matters more for espresso than almost any other specification. Note that this is about resolution rather than stepless versus stepped: a stepped grinder with fine enough steps at the espresso end dials in perfectly well, which is exactly why one appears among our picks.
Burr vs blade: why blades cannot do it
This is not a matter of degree. It is a mechanical difference in what the two devices do.

A correction about our own sourcing. Earlier versions of this page stated an espresso grind window of 200–300 microns and attributed it, along with a claim about how many seconds one adjustment click moves a shot, to Clive Coffee’s particle-size guide. We went back and read that article in full: it contains no micron range at all. The figure was not supported by the source we hung it on, so both the number and the per-click claim have been removed rather than re-attributed to something else we had not checked. The burr-versus-blade mechanism described above is basic grinder engineering and needs no citation; the quantitative claims did, and they did not have one.
What to look for in an espresso grinder
1. Fine adjustment — stepless or micro-stepped
The single most important espresso-specific feature. Stepped grinders designed for filter coffee often jump too far between settings at espresso fineness, so the setting you actually want can fall between two clicks with no way to reach it. How large that jump is varies enormously by grinder — we have seen the claim that one click moves a shot by a fixed number of seconds, and it is not a general property of anything. Stepless (continuous) or sufficiently fine-stepped adjustment is what lets you land on the setting you want.
2. Burr size and quality
Larger burrs generally increase throughput and need fewer revolutions per dose, which tends to mean less heat. What diameter does not do on its own is determine particle-size distribution — geometry, alignment, RPM and how the grinder feeds beans matter more than the number on the spec sheet. A well-aligned smaller burr set can outperform a poorly aligned larger one.
As rough consumer shorthand rather than an engineering standard: 40 mm grinders tend to occupy the entry level, 55–64 mm covers most higher-performance home grinders, and 80 mm+ is common in prosumer and commercial machines.
3. Retention and single-dosing
Retained grounds can introduce older coffee into your next dose and cause dose error. What matters is not simply that a grinder retains something, but how much, where it sits, and how much of it is pushed out by the next dose — a grinder can retain a little and still be perfectly consistent. Single-dose designs — weigh beans in, essentially everything comes out — minimise the problem, and have become increasingly popular with enthusiasts for that reason.
4. Flat or conical burrs
Flat and conical burrs can produce different particle distributions, but geometry alone does not decide what is in the cup. Many flat-burr designs are associated with more clarity and separation; many conical designs are favoured for body and a more blended profile. The cooler, quieter, lower-retention characteristics often attributed to conicals belong to particular grinder implementations — RPM, architecture, chute design — rather than to the burr shape itself. Both make excellent espresso. Do not let this choice paralyse you; adjustment precision, alignment and burr quality matter more.
5. Static, workflow and the things spec sheets omit
Three considerations decide how a grinder feels to live with, and none of them appears on a spec sheet.
- Static. Grinding charges the coffee, which makes grounds cling inside the grinder and scatter on the counter. One commonly used approach is the Ross Droplet Technique (RDT): stirring a very small amount of water into the beans before grinding, which many users find reduces static and grounds scatter, particularly with drier or lighter-roasted coffee. Check your grinder manufacturer's guidance before adopting it — introducing moisture into a burr set is not universally recommended.
- Workflow. A single-dose grinder with a bellows and a catch cup is a different daily object from a hopper grinder with a timer, even at identical burr specs. Decide which you actually want before comparing burr diameters.
- The dial. Adjustment precision on paper is worthless if the collar is stiff, unmarked, or has to be turned through half a rotation to move a shot. This is the specification nobody publishes and everybody notices.
Alignment deserves its own note: burrs that do not sit parallel produce a wider particle distribution regardless of their size or geometry. It can be a major gap between what a grinder's specifications suggest and what it actually produces, which is why we keep pointing at alignment rather than diameter.

If you drink light-roast espresso
Light-roast espresso is the hardest thing to ask of a grinder, and it is worth saying why rather than just asserting it. Lighter-roasted beans are denser and harder, so they resist grinding and tend to produce a wider spread of particle sizes at the same setting. They also need finer grinding to extract properly in the same time window, which pushes a grinder toward the fine end of its range where adjustment steps matter most.
What that means when shopping: adjustment resolution at the fine end matters more than anywhere else, because you will be working in a narrow band and need to land precisely in it. Larger, well-aligned burrs help. Flat burrs are frequently preferred for the clarity that suits light roasts, though as above that is a tendency rather than a rule. And a grinder that is merely adequate for dark-roast espresso can be genuinely frustrating with light roasts on the same shelf.

Hand grinders for espresso
Manual grinders are a legitimate espresso option, and good ones produce espresso-capable particle distributions. What you trade is convenience: grinding 18 grams at espresso fineness takes substantially more effort than pressing a button, and for many models an 18 g dose is the better part of a minute — though that varies a great deal by grinder, burr set and bean.
- Good for: one or two espressos a day, travel, small kitchens, filter brewing, and anyone who wants espresso-grade consistency for well under the price of a comparable electric grinder.
- Frustrating for: households pulling several shots each morning, milk-drink routines where you are already busy, or anyone with wrist or grip issues.
- What to check: that the adjustment mechanism is fine enough for espresso (many budget hand grinders are filter-only), and that the burr set is steel and properly aligned.

Do I really need a special grinder for espresso?
Yes, and it is the least optional part of a home espresso setup. Espresso needs a very fine grind with a tight particle-size distribution, because roughly nine bars of pressure pushes water through the puck in a short window — many recipes land around 25–32 seconds — so small differences in particle size change the shot dramatically. We deliberately do not quote a micron figure: espresso grounds are a distribution rather than a single size, and we could not find an authoritative published range to stand behind. How big that jump is varies by grinder, so treat it as something to check on the specific model rather than a fixed number of seconds. For daily espresso, adjustment resolution fine enough to land on the setting you want is one of the most useful things a grinder can offer.
Are flat burrs better than conical for espresso?
Neither is inherently better.
