The pressure gap, and why it decides everything

Both brewers force hot water through a bed of fine grounds - that much they share, and it is why moka pots are marketed as stovetop espresso makers. The difference is the force. A sealed moka boiler raises 1-2 bar of steam pressure; an espresso machine's pump holds 9 bar against the puck, the figure espresso standards specify. Pressure is the extraction budget: it sets how fine the grounds can be, how hard the water works, and how much of the coffee ends up dissolved in the cup.
