The right espresso cup is a size question before it is a style question. A single shot is about 25-30 ml and a double about 60 ml, so a demitasse of 60-90 ml is the espresso cup; the competition cups from Loveramics and notNeutral sit at 80 and 90 ml. A flat white is built for about 150 ml, a cappuccino for 180-200 ml, and a latte for 300 ml and up - the cup makers themselves publish those sizes, and they are listed below. The one number people get wrong is the shot glass: a US shot glass holds 37-44 ml, so it is a measuring tool for a single shot, not a serving cup. Everything on this page is a verified listing with its own stated capacity; nothing here is a taste judgement.
Cup makers who supply cafes publish their sizes by drink, and the two most-cited ranges agree with each other. Loveramics sizes its Egg range at 80 ml for espresso, 150 ml for a flat white, 200 and 250 ml for a cappuccino and 300 ml for a cafe latte. notNeutral's LINO range runs from a 3 oz (90 ml) espresso cup through single and double cappuccino to small and large latte, and its Vero glasses are 3 oz for espresso, 4.25 oz for a cortado, 6 oz for a cappuccino and 12 oz for a latte. Wikipedia's entry for the demitasse gives the same espresso figure: approximately 60-90 ml. Put together, the sizes on this page are not opinions; they are what the people who make the cups say they are for.
The reason the sizes matter is the ratio of coffee to milk. A double shot of about 60 ml in a 150 ml cup leaves room for roughly 90 ml of milk - a flat white. The same shot in a 300 ml cup takes four times the milk - a latte. Pour a cappuccino into a latte cup and you have not made a bigger cappuccino; you have made a latte. The most-searched question on this subject is about shot glasses, so here is the answer with its sources. In the United States there is no legal single-shot size except in Utah, where a shot is 1.5 US fl oz (44.4 ml); the generally accepted standard is 1.25-1.5 US fl oz, or 37-44 ml. Elsewhere a shot is smaller: 20 ml in Germany, 25 or 35 ml in the UK and France, 30 ml in Australia and Japan, 44 ml in Canada, 50 ml in Russia.
An espresso is a different measure again. A single shot is typically 25-30 ml of liquid and a double roughly twice that, which is why baristas use a marked 2 oz (60 ml) measuring glass rather than a bar shot glass: a double fills it to the line. Thick-walled porcelain is what cafes use, and the listings say why: Loveramics states porcelain fired at 1300°C that holds temperature in its thick walls, and Sweese and vancasso both state lead-free glazes that go through the dishwasher and microwave. A saucer is part of the cup for a reason - it catches the drip and gives the spoon somewhere to go. Double-wall borosilicate glass - De'Longhi's 3 oz tulips and Bodum's 2.5 oz Pavina - shows the crema and the layers of a cortado and can be held without a handle because the outer wall stays cool; the trade is that glass keeps coffee hot for less time than thick porcelain. 300 ml and up. Loveramics' cafe latte cup is 300 ml (10 oz) and notNeutral's Vero latte glass is 12 oz. A 12 oz mug is a latte mug; the listing for the vancasso set notes its practical fill is about 10 oz.
They are different. Double-wall borosilicate glass shows the drink and stays cool on the outside; thick-walled porcelain, which is what cafes serve in, holds heat in the walls for longer. Both materials appear on this page with their listings' own descriptions, and neither is scored.
