De'Longhi sells two different things under one name: machines you operate and machines that operate themselves. Pick the fork first, the model second.

De'Longhi's range confuses people because it is not a ladder. It is two separate product lines sharing a badge, and choosing the wrong one costs more than choosing the wrong model within one. Pump machines — the Stilosa, the Dedica, the La Specialista — give you a portafilter and a steam wand, and you make the coffee. Bean-to-cup machines — the Magnifica Evo and the Dinamica Plus — grind, dose, tamp, brew and froth behind a closed door, and you press a button. Both make espresso. They are not versions of each other, and almost nobody is genuinely choosing between them: you already know whether you want a hobby or a appliance.

The pump machines, and what separates the three

All three hand you a portafilter. What changes is how much of the rest is included.

The Stilosa is the entry point: a pump, a portafilter, a wand, no grinder. The Dedica Deluxe is the same proposition in a notably slim body, which is the reason to choose it — it is built for a counter that has no room. The La Specialista is the one with a grinder built in, so it is a single box rather than two.

One thing to know before you commit to the La Specialista: its portafilter is 51 mm. That is smaller than the 58 mm size most aftermarket baskets and tampers are made for, so the accessory market is thinner. If you expect to tinker, it is worth knowing going in.

The bean-to-cup machines, and the honest trade

The Magnifica Evo and Dinamica Plus do the whole sequence behind a door. Beans in the top, cup underneath, one button. Milk is frothed automatically rather than by you.

What you give up is control and, at the margins, ceiling: a well-made shot on a pump machine with a good grinder will beat a bean-to-cup, because you are choosing the dose, the grind and the timing. What you gain is that it happens every time without you, which for most households is worth more than the last ten per cent of the cup. What is the difference between De'Longhi's pump and bean-to-cup machines?

A pump machine gives you a portafilter and a steam wand and you make the coffee yourself. A bean-to-cup machine grinds, doses, tamps, brews and froths behind a closed door at the press of a button. They are different products, not different tiers of the same one.

Does the De’Longhi Stilosa have a grinder?

No. Neither the Stilosa nor the Dedica Deluxe has a grinder, so you buy one alongside. Among the pump machines only the La Specialista has one built in.

Why is the La Specialista portafilter 51 mm and does it matter?

It matters only if you plan to buy accessories. Most aftermarket baskets, tampers and distribution tools are made for the 58 mm commercial standard, so a 51 mm machine has a thinner accessory market. For brewing itself it is not a problem.

Is the Magnifica Evo or the Dinamica Plus better?

Which De’Longhi is best for a beginner?
